- If you haven’t had a Boston Cream Pie, you’re missing out on a wonderful dessert that combines sponge cake, vanilla custard and chocolate glaze. If you want to get your pie in a smaller package, however, consider trying The Spiffy Cookie‘s Boston Cream Pie Speculoos Cookie Cups, which offer a single-serving spin on the classic dessert. The cookie cup “crust” is made with brown sugar and cookie butter, for a flavorful and sturdy base. It is filled with vanilla custard and topped with a chocolate ganache that is also infused with cookie butter. They’re decadent, and just the right size for sharing.
- I’ve used all kinds of fruit to make crumbles, but The Unlikely Baker‘s Tropical Kiwi Crumble features a fruit that I don’t often use in baking: kiwis. Kiwis are a flavorful tropical fruit typically eaten straight out of the peel, but they can actually be baked with, as well. The fruit becomes very tender and creamy, but its flavor intensifies. Fortunately, the puff pastry-based tart is very easy to put together, so you don’t need to feel guilty about destrying a work of art to sate your craving for summer tomatoes because you can always whip up another one! This tart is a great entertaining option, so keep it in mind for summer gatherings.
- Recipe Throwback: It doesn’t get any simpler than these classic Tomato & Garlic Bruschetta, but that doesn’t make them any less delicious. This easy dish is one of my favorite snacks in the summer, when my kitchen is packed with tomatoes that are at their seasonal peak. I’ll serve these at a party or even eat them just for lunch!
