- Strawberries are in season and I’ve been doing a lot of strawberry baking. Seasons & Suppers has a Fresh Strawberry Glaze Pie, which is one more recipe that takes advanatage of fresh berries while they’re in season. The pie starts by baking a pie crust in a skillet, then adding a generous quantity of whole berries to the shell once it has cooled. A glaze made with fresh berries is poured on top, and the whole thing is left to set before serving. You can also use a regular pie plate, but a skillet gives this pie a great look.
- My friend Peabody gave her blog a makeover and relaunched Culinary Concoctions by Peabody as Sweet ReciPEAs. Her Circus Animal Cookie Cupcakes are as sweet as the new name for the site, and will definitely transport you back to your childhood. The cupcakes actually contain chopped up circus animal cookies, which give them a hint of pink, and are finished with a pink, sprinkle-topped swirl of frosting.
- The Peaches n’ Cream Waffles from Floating Kitchen are a good way to start off a summer breakfast. The waffles are tender and fluffy, with a batter made from sour cream. After a quick trip through the waffle maker, they’re topped with a peach topping made with fresh peaches, maple syrup, cinnamon, bourbon and – you guessed it – cream. I highly recommend picking up the Presto Flipside Waffle Maker that I reviewed recently, as it makes outstanding waffles.
- Recipe Throwback: Last year, I whipped up a Homemade Hula Pie, inspired by one that I had a Duke’s in Waikiki. This ice cream pie starts with a chocolate crumb crust, which is filled with rich macadamia nut ice cream and topped with a chocolate fudge glaze. A generous spoonful of whipped cream is a nice finishing touch. The pie is a great make-ahead option for your next luau!
