Halloween is just around the corner and I am in the mood for some spooky sweets! The only bad thing about Halloween baking is that there is a very short window of time to take advantage of it. I advise starting right now, so you have time to give all of these a try before the 31st rolls around.
- A batch of Monster Peanut Butter Cup Stuffed Cupcakes from The Life Jolie are a crowd-pleasing option with a very sweet surprise inside. These cupcakes could be served year-round, but the funky green frosting and googly eyes that top them make them an ideal Halloween option – not to mention a great way to put some of that Halloween candy to good use!
- The Caramel Apple Crumb Bars from Happy Foods Tube are sure to get a thumbs up from anyone who is a fan of classic caramel apples. The tender bars are loaded with apples, streusel and dulce de leche. While caramel apples are fun to make, they can be messy to serve, so this might be a better choice if you have a crowd coming over for some pre-Trick or Treating snacks.
- The Gluten Free Alchemist baked up some Halloween Pumpkin Mini Rolls that are a great choice even if you’re not eating gluten free. A pumpkin roll cake is filled with cream cheese frosting, cut into individual servings and topped with cream cheese ghosts. It’s spooky and sweet – and easier to put together thna you might think!
- Over on the Craftsy Blog, I have a fantastic recipe for Dark Chocolate Pumpkin Pie that is sure to please anyone who normally prefers chocolate to pumpkin. The easy pie features both dark chocolate and cocoa powder in the filling, for a bittersweet flavor that balances nicely with the pumpkin pie spices that are also in the mix. Make your pie in a chocolate crust for an even deeper flavor.
- Recipe Throwback: One of my all-time favorite Halloween treats is my Brain Panna Cotta with Raspberry Filling. You do need a special mold to make them (any brain-shaped mold, such as an ice cube tray) will work, but they are well worth the effort. An easy vanilla panna cotta has a spooky shape and oozes a sweet red filling when you cut into it. They’re impressive – and delicious, even if you’re not a zombie!
