Cinco de Mayo is just around the corner and that means I had my eye out for some recipes that might be good for a celebration this week! Margaritas are a must, so check out my post on the Craftsy blog (it’s free!) about how to make a perfect margarita, then whip up a batch to enjoy while you check out the rest of these recipes.
- Marsha’s Baking Addiction whipped up some Margarita Cupcakes. These tender cupcakes are made with a yogurt-based cake batter, for a little tang, and are flavored with lime juice and tequila. The frosting also has a splash of tequila and lime to tie everything together. These festive, grown-up cupcakes are perfect for a party.
- The Creamy Coconut Mango Margarita Popsicles with Basil from Floating Kitchen may have a long name, but are easy to make. The popsicles start with base that would make a fantastic frozen margarita in its own right, with fresh mangoa and coconut milk giving them a creamy base. They’re swirled with a mixture of fresh basil, lime and agave, adding brightness and a lovely pop of color to each pop.
- These Churro Cheesecake Bars from Simple Sassy Scrumptious are a very easy recipe that produce churros with a twist! Two layers of pastry – and storebought pastry makes it simple – sandwich a filling made with lightly sweetened cream cheese. A generous topping of cinnamon sugar and a drizzle of honey tie everything together for a churro that you can make without any frying and easily serve to a crowd.
- Palomas are refreshing cocktails made with grapefruit and tequila and the Paloma Cupcakes from Nourish and Fete capture all those flavors perfectly. The buttermilk cupcakes are infused with lime and grapefruit zest, as well as a splash of tequila. A brush of tequila on top makes sure that you get some of that agave flavor in each bite, and a flavorful lime, grapefruit and tequila frosting ties everything together. A wedge of pink grapefruit is not a traditional cupcake topper, but it looks like a cocktail garnish and gives the cakes a beautiful finished look.
- In case you’re not in the mood for a margarita-inspired treat this Cinco de Mayo, give Baking Sense‘s Flourless Mexican Hot Chocolate Cake a try. The easy cake uses a generous amount of bittersweet chocolate and pairs it with almond flour, cinnamon and chipotle powder for a cake that is not only rich and chocolaty, but full of Mexican chocolate flavor. It’s served with a tequila-spiked cinnamon whipped cream that contrasts well with the decadent cake.
- Recipe Throwback: These Margarita Cheesecake Bars are definitely party-ready. The easy-to-make bars have a buttery shortbread base and are topped with a creamy layer of lime and tequila infused cheesecake. This style of cheesecake is my favorite because it is much easier to make than a traditional cheesecake, but just as creamy and delicious.
