Bites from other BlogsWhen spring rolls around, I get out my patio furniture and start to enjoy brunch outdoors. A lazy brunch with homemade treats is a wonderful way to spend the weekend – whether you’re enjoying it yourself in your rob or sitting with friends and family! Here are a couple of brunch-friendly recipes to help you kick off the season.

  • Petit Bakes baked up some Apricot Spelt Danishes that use a flaky homemade dough and a simple jam filling. The homemade dough is easier than traditional danish dough, but it shoud be prepared the night before so that it has plenty of time to rise. Fortunately, this means you can do almost all your prep in advance, then just spend a few minutes shaping and baking pastries while you brew your morning coffee.
  • Another apricot recipe comes from Inspiration Kitchen, whose Apricot Scones are loaded with sweet pieces of dried apricot in every bite. The tender scones are made with sour cream and infused with orange juice and almond extract to compliment the flavor of the apricots. Sprinkle a few sliced almonds on top before baking to add a little bit of additional texture to these brunch pastries!
  • 3 Scoops of Sugar‘s Blueberry Lemon Muffins With Pistachio Crumb Topping are a brunch treat that combines quite a few different flavors. The tender muffins are made with greek yogurt and flavored with lemon zest, in addition to being studded with fresh blueberries. The yogurt makes the muffin batter thick enough to hold up the berries and gives it a great crumb. The pistachio topping adds color, sweetness and a nutty finish.
  • Recipe Throwback: A clafoutis is a dessert that is somewhere between a custard and a cake in consistency. I find that if you enjoy dutch babies, you’ll also enjoy them. This Plum Clafoutis is loaded with sweet, ripe plums that give the dessert both a beautiful color and a wonderful flavor. The dessert is also very easy to make, so it’s a great dish to throw together at the last moment for a dinner party or a brunch.
