  • Jelly Toast‘s Mini Key Lime Coconut Cheesecakes are not your average cheesecake – and not just because of their small size. These little cheesecakes use both cream cheese and goat cheese in the filling, giving them a unique flavor profile. The coffee-flavored cake is a light and airy chiffon cake, not the variety that is topped with streusel and served for brunch. It is made with a generous amount of strong coffee to flavor the cake, then topped off with a coffee meringue buttercream. The buttercream not only brings another layer of coffee flavor to the cake, but the silky-smooth frosting is a nice contrast to the lightness of the cake. A few coffee beans – or even a few chocolate covered coffee beans – would make a nice garnish to finish off this cake before serving.
  • Just as coffee lovers might go for the cake above, tea drinkers will probably want to give these Pistachio Chai Muffins from An Edible Mosaic a try sooner, rather than later. The muffins actually have strong chai tea stirred right into the muffin batter to infuse them with a good tea flavor. They’re topped with pistachios that stay nice and toasty in the oven. The muffins also feature a blend of regular and whole wheat  flour, to give them a whole grain boost and make them a healthier part of your breakfast. If you want to sweeten them up a little before serving, a drizzle of vanilla glaze (which you could also infuse with chai) is a nice finishing touch.
